Cranberry and orange loaf

I'm a little bit obsessed with cranberry and orange as a flavour combination right now! It's the perfect combination of sweet and tangy, they just balance each other perfectly...cranberry & orange porridge, energy balls, flapjacks...i could go on! 

Baking isn't really my forte, but i do likely to have a play now and then, so when I saw a recipe for cranberry & orange loaf I had to try it! I added a couple of carrots to add some moisture and used chia seeds instead of eggs and we have an oh so delicious and really relatively healthy fruit loaf, perfect with a cuppa for second breakfast 🥰

Cranberry, orange & carrot loaf

Ingredients:

🧁 1 tbsp chia seeds⁠
🧁 1/2 cup almond milk ⁠
🧁 4 tbsp coconut oil ⁠
🧁 1 orange (zest & juice)⁠
🧁 1/2 tsp vanilla paste⁠
🧁 2x medium carrots (peeled & grated)⁠
🧁 1/3 cup maple syrup⁠
🧁 1 1/2 cups wholemeal self raising flour ⁠
🧁 1/2 cup porridge oats⁠
🧁 1/2 cup dried cranberries ⁠
🧁 1 tbsp cinnamon⁠
🧁 1 tsp ginger⁠
🧁 1 tsp baking powder⁠
🧁 1 tsp bicarbonate of soda⁠
🧁 pinch of salt⁠

Method:

  1. Pre-heat oven to 150 degrees.
  2. Mix the chia seeds with the almond milk and set aside for 10 minutes allowing the chia seeds to plump up.
  3. Melt the coconut oil in a small saucepan, add the orange zest, juice and vanilla bean extract.
  4. Peel and grate the carrot into a small bowl, add the maple syrup, coconut oil mixture and chia seed mixture. Mix well.
  5. Measure all dry ingredients into a large mixing bowl and mix.
  6. Add the wet ingredients to the dry and mix well.
  7. Fold in the dried cranberries. 
  8. Turn out into a loaf tin and bake in pre-heated oven at 150 degrees for 45 minutes. 
  9. Allow to cool before cutting and enjoy with a cup of tea 🥰
