Easy PEAsy Pea & Mint soup
Warming and comforting but with a sprinkling of summer magic...perfect for a sunny day in Scotland ;-)
I absolutely love this soup, is souper quick and easy to make and just tastes so damn good!
Okay enough of the bad puns, here's the recipe.
- 250g frozen peas
- 1x 400g can of cannellini beans
(or butter beans, whichever you have in the cupboard)
- 500ml veg stock
- 6x sprigs of mint
- 1/2 tsp ground black pepper
- Chuck it all in a pot
- Bring to the boil
- Simmer for 10mins.
- Blitz until its at a consistency that you like.
Play around the the quantities, if you like it minter add more mint, if you want it creamier add more beans, thinner add more water. Honestly, you cannot mess this one up!
It just takes 15 mins, no prep time or anything, so give it a go and share a pic of your creations.
