According to vegconomist around 50% of UK households will cater for vegans this Christmas, and around 20% will cook a fully vegan meal.

Not only will i be part of that 50% but it's my mission to make it so delicious that I inspire more people to join us next year...lets see if we can tip the vegan households into the majority for 2021!

Between now and Christmas I'll be sharing recipes to inspire at least some vegan components of your Christmas dinner 🤗

Vegan stuffing balls

Ingredients (serves 4):

🎁  1 tbsp olive oil
🎁  200g mushrooms (finely diced 1/2 cm cubes) 
🎁  3 cloves garlic (peeled, crushed & finely chopped) 
🎁  50g kale leaves (stems removed & finely chopped) 
🎁  50g porridge oats
🎁  1x 400g can green lentils (drained & rinsed) 
🎁  100g walnuts • 2 tsp fresh thyme 
🎁  1/2 tsp dried oregano 
🎁  1/2 tsp fresh rosemary 
🎁  40g dried cranberries 
🎁  1 tbsp ground flax mixed with 2 tbsp water 
🎁  2.5 tsp red wine vinegar 
🎁  1 tsp salt

Method:

🔪  Sauté the finely chopped mushrooms with 1 tbsp olive oil, garlic & salt in a large pot for 8 mins, until the mushrooms start to cook down.
🔪  Meanwhile in a food processor blitz the oats to a coarse flour, add the drained lentils & walnuts, roughly blend, you don’t want it to become a paste, chunky bits are good.
🔪  Add the herbs, chopped kale and cranberries to the pot with the mushrooms, stir well so everything is coated with flavour then set aside.
🔪  Add the flax mix, red wine vinegar and contents of the food processor to the pot, stir until all combined, it should form a heavy, dense dough.
🔪  Taste and adjust seasoning as required.
🔪  Roll the mixture into approx 2 inch balls
🔪  Place on an oiled baking tray and cook at 180 degrees for 15-20 mins
