Granola

 

By popular demand i'm sharing lots of healthy, warming, plant-based, winter breakfasts. And surprise surprise they are all oatalicious! If you know me at all or follow New Norm you will know that I can't get enough of d'em oats!

And for good reason, not only are they delicious, they're versatile and also bloody good for you!

Before i launch into our oaty breakfast recipes, lets take a few minutes to marvel at the wonder of oats...

 

(You got me, it's a re-run...long hair, bare arms and episode 8...guess what we're on now...episode 21!?! ...a girls gotta have holiday though, so let's enjoy a re-run for one week only!)

100g oats contains: 380kcal | 86g carbs | 13g protein | 6.5g fat | 10g fibre

100g of oats contains 1/3 of your recommended daily allowance of fibre (30g)...BOOM.  The fibre in oats are mainly soluble fibres called beta glucan which help to slow digestion and keep you fuller for longer. So a great way to start the day!

Here is just one of them...Banoffee Granola...it's an absolute peach!

Bannoffee granola

Banoffee Granola (serves 5)

Ingredients:

🥜 200g jumbo oats ⁠
🥜 50g pumpkin seeds⁠
🥜 50g flaked almonds⁠
🥜 50g pecans (or walnuts)⁠
🥜 2 tbsp chia seeds or flax seeds (optional but adds a bit of extra protein)⁠
🥜 5x medjool dates⁠
🥜 2x ripe bananas⁠
🥜 1 tsp vanilla extract⁠
🥜 3 tbsp coconut oil ⁠
🥜 3 tbsp water ⁠

Method:⁠

👩‍🍳 Melt the coconut oil in a small saucepan ⁠

👩‍🍳 Blend the banana, dates, vanilla extract, melted coconut oil & water ⁠

👩‍🍳 Measure all the dry ingredients into a bowl⁠

👩‍🍳 Pour the blended banana & date mixture over the dry ingredients and mix well so it's all coated with tastiness. ⁠

👩‍🍳 Transfer to a lined baking tray, making sure it is not loaded too thick to allow all the granola to bake and crispen up.⁠

👩‍🍳 Bake in a pre-heated oven at 150 degrees for 40 mins, checking and turning every 10 mins to ensure a nice even bake and beautifully crunchy granola!⁠

👩‍🍳 Cool thoroughly on the baking tray before transferring to an air tight container.

This is gorgeous served with some chopped fruit and dollop of coconut yogurt, or however you like to eat your granola...i think its quite a personal thing...milk or yogurt!? 

Store the granola in an air tight container and it should be good for 2 weeks.
