Buckwheat is high in protein & fibre so it’s a great alternative to rice. With a slightly nutty flavour it balances perfectly with the earthy tones from the mushrooms & sweetness from the leeks.
We love mushrooms because they are low calorie but packed with flavour and nutrients.
